


Some cooking...

Ingredients:
200ml milk
250g butter
1kg granulated sugar
5 tbsp golden syrup
400g condensed milk
Method:
1. Put all the ingredients in a saucepan and boil on a high heat for 15-20 minutes, stirring constantly, until it reaches 115C on a sugar thermometer.
2. Pour into a mixing bowl and leave for 5 minutes to cool slightly. Whisk until the sugar crystallizes turning the mixture from toffee to fudge. It will look matt and a little grainy.
3. Spoon into a baking tray lined with greaseproof paper to cool and set. Cut into cubes after about an hour and put on a cooling rack to cool completely.

ReplyDeleteI think your Mum will have told you that I was supposed to be back in London but am stuck in Singapore because of the volcano in Iceland.
Do you think you could find out on a map where Singapore is, and also where Iceland is?
Today I travel to a city called Johor Bahru which is at the southern most point of a country called Malaysia!
Crazy eh?
I'm missing you both, and am hoping very much that I get to see you both very soon.

PS, Ruby, you might also find that it will help your ankle if you get your Mum to put polystyrene (or paper) cups of water in the freezer. Once they are frozen, you peel back a bit of the cover, and then gently roll the ice over where your ankle is sore. This is called an ice massage (!) and it will help reduce the swelling and make the pain go away.
